I heart fall. Here in Nashville it may be 80 plus degrees during the day, but the mornings are deliciously cool.
This is one of my favorite soup recipes. I added diced grilled chicken to it today, in addition to the ground beef, for a different twist and it tastes amazing!
Santa Fe Soup
2 pounds ground beef or ground chuck
1 medium onion chopped (brown together and drain)
2 cups water
2 packages taco seasoning
2 packages ranch dressing mix(sometimes I only add one package each to “tone” it down)
1 can diced tomatoes (I used the fire roasted variety this time)
1 can Rotel tomatoes
1 can black beans
1 can pinto beans
1 can kidney beans
2 cans whole kernel corn
Brown ground beef & onions
Add dry mixes
When all pink color disappears, add all cans and water (do not drain beans and tomatoes, this makes the soup)
Simmer at least 2 hours
Serve with garnishes such as grated cheddar cheese and low-fat sour cream.
